Chop leftover roasted cauliflower from the night before and sauté it in butter, then combine it with eggs. Since cauliflower is a nonstarchy vegetable, this makes a low-carb brunch dish.

Step by Step

How to make it?

1

Cook the Onion

4 min

Melt the butter in a skillet. Add the onion and cook for 4 minutes, until lightly browned.

2

Warm the Cauliflower

6 min

Add the chopped roasted cauliflower, cumin, salt, and black pepper to the skillet. Sauté for 6 minutes, until lightly browned.

3

Add the Eggs

4 min

Crack the eggs directly into the skillet and cook over low heat, stirring gently, for 4 minutes, until still slightly runny.

Reminder

Break the cauliflower into small pieces; large pieces will not combine with the eggs and will remain separate on the plate. Keep the heat low while cooking; high heat can make the eggs tough and rubbery. Allergen: Contains egg and dairy (butter).
