This classic French tart has a lemon curd filling in a blind-baked, crumbly crust. Lemon curd is not a custard thickened with starch; it sets as the eggs coagulate and the butter firms up as it cools. The cooking window is narrow: overcooked curd develops bits of scrambled egg, while undercooked curd remains runny even when chilled.

Make the tart dough

Combine the flour, powdered sugar, and salt. Add the cold butter in cubes and rub it in with your fingertips until the mixture resembles coarse sand. Add the egg yolk and press the dough together for no more than 30 seconds. Shape it into a disk, wrap it in plastic wrap, and refrigerate.

Fit the dough into the tart pan

Roll the chilled dough to 3 mm thick between two sheets of parchment paper and fit it into the tart pan, pressing the edge and bottom together with your fingers. Prick the bottom all over with a fork and freeze the pan for 15 minutes.

Blind-bake the crust

Line the crust with parchment paper and fill it with dried beans or pie weights. Bake in an oven preheated to 180°C / 355°F for 15 minutes. Remove the weights and bake for 5 minutes more; the crust should look matte and dry. Let it cool completely, since pouring the curd into a warm crust will make it soggy.

Cook the lemon curd

Whisk the eggs, sugar, lemon juice, and zest constantly in a heatproof bowl set over simmering water. Remove the bowl from the heat when the mixture thickens enough to coat the back of a spoon and a line drawn through it stays open. This takes about 10 minutes; do not let the mixture boil. Add the butter a few cubes at a time, whisking until each addition melts.

Fill and smooth the tart

Pour the curd through a fine-mesh sieve into the cooled crust; the sieve will catch any bits of egg that formed during cooking. Smooth the top with a spatula, tap the pan lightly on the counter once, and refrigerate.

Reminder

Refrigerate the filled tart for at least 3 hours; this chilling time is not included in the recipe time. The lemon curd sets as it cools, and the tart will not slice cleanly while warm.

Limon kremasını pişirirken indirme anını kaçırdım, yumurta pıhtılaştı ve krema tanelendi. Kremayı pişirirken sürekli çırpmak gerekiyor, bir an bıraktığımda dipte yumurta pıhtısı oluştu ve kremayı süzmek zorunda kaldım.
