These Jordanian-inspired patties are made by kneading red lentils and fine bulgur with grated carrot and spices, then cooking them in an air fryer without deep-frying. Cumin gives the patties their distinctive flavor.
Simmer the red lentils in water until tender. Stir in the fine bulgur, cover, and let it stand.
Once the lentil and bulgur mixture has cooled to lukewarm, add the grated carrot, onion, parsley, cumin, olive oil, and salt. Knead to combine.
Press and shape small patties in your palm.
Arrange the patties with space between them in the air-fryer basket. Cook until browned on the outside, turning them halfway through.
Let the lentil and bulgur mixture cool until lukewarm before shaping; while hot, it will stick to your hands. Contains wheat (gluten) from the bulgur.
