These cookies use flour made from ground red lentils instead of regular flour and are mixed with olive oil instead of solid fat. Their high fiber and protein content is described as making them a more heart-friendly snack than traditional cookies.

How to make it?

Knead the Dough

Mix the lentil flour with the sugar, baking powder, and salt. Add the olive oil and vanilla and knead until the dough comes together by hand.

Shape the Cookies

Take pieces of dough weighing about 20 grams and roll them into balls. Arrange them spaced apart on a parchment-lined baking sheet and flatten slightly with your palm.

Chill

Chill the shaped cookies in the refrigerator for 10 minutes before baking so they hold together in the oven.

Bake

15 min

Bake in an oven preheated to 175°C / 345°F until the edges are lightly colored. The cookies will still feel soft when they come out of the oven.

Reminder

Dust your hands with a little lentil flour when shaping the dough; otherwise, it may stick and lose its shape.

Mercimek ununu evde kuru mercimeği kahve değirmeninde öğüterek mi hazırlamalıyım, yoksa hazır mercimek unu tadı ve kıvamı açısından daha mı iyi sonuç verir? İkisini de denemek istiyorum aslında.
