Magnolia pudding is a layered dessert made by alternating pudding with cookie crumbs crushed and toasted in butter. Toasting the crumbs is the recipe’s defining step: dry crumbs absorb the pudding and turn doughy, while butter-toasted crumbs keep their sandy texture because the fat coats them. Toast the cookies

Put the cookies in a bag and crush them with a rolling pin until they are about the size of coarse sand; do not grind them to a powder. Melt the butter in a skillet, add the crumbs, and toast over medium heat for 4 minutes, stirring constantly. When the crumbs darken slightly and smell buttery, spread them on a large plate to cool; they can burn from residual heat if left in the pan.

Make a starch slurry

Whisk the starch with 200 ml of the milk until smooth, then strain it through a sieve.

Cook the pudding

Bring the remaining milk to a boil with the sugar and butter. Slowly pour in the starch mixture while stirring, then reduce the heat and cook for 9 minutes, scraping the bottom of the pan as you stir. When the mixture coats a spoon, remove it from the heat and let it cool for 10 minutes; boiling pudding will immediately soften the cookie crumbs.

Layer the dessert

Sprinkle half of the toasted cookie crumbs into the bottom of the cups. Pour half of the cooled pudding over them and smooth it with the back of a spoon. Repeat the layers once, finishing with pudding on top so the cookies do not touch the fruit. Refrigerate the cups.

Add the fruit just before serving

Slice the strawberries over the chilled cups just before serving. Sprinkle with a pinch of the remaining toasted crumbs and serve.

Reminder

Chill the assembled cups in the refrigerator for at least 3 hours; this time is not included in the recipe’s listed time. Add the fruit just before serving, or its juice may thin the top layer.

Bisküviyi tereyağında kavurmak nemlenmesini geciktiriyor. Çileği servis anında koyma uyarısı da doğru, önceden koyunca su salıp muhallebiyi sulandırdı. Muhallebiyi biraz koyu tutmak da gerekiyor, akışkan muhallebi bisküvi katmanının arasından sızıp katmanı belirsiz yapıyor.
