Malva pudding is a comforting South African dessert: a sponge cake made with apricot jam and moistened with a warm creamy syrup. Served warm, it is known for a lightly crusted exterior and a moist interior.

Make the Batter

Mix the flour, sugar, and baking powder. Add the egg, apricot jam, melted butter, and milk, then mix until smooth.

Pour into a greased pan and bake in a preheated 180°C / 355°F oven for 30–35 minutes, until a toothpick inserted in the center comes out clean.

Make the Syrup

Bring the cream, butter, and sugar to a boil over medium heat. Cook for 5 minutes.

Slowly pour the hot syrup over the hot cake and let it soak in for 10 minutes.
