Drawing on Canada's maple syrup tradition, this thin flatbread is topped with salmon slices slowly caramelized in maple syrup, then baked. Slowly caramelizing the salmon is the most time-consuming part of the recipe.

Step by Step

How to make it?

1

Knead the dough

30 min

Dissolve the yeast in lukewarm water, then knead with the flour, olive oil and salt. Rest for 30 minutes.

2

Caramelize the salmon

40 min

Cook the salmon slices with the maple syrup in a frying pan over low heat for 40 minutes, turning frequently, until caramelized.

3

Roll out and top

10 min

Roll the dough into a thin rectangle and arrange the caramelized salmon on top.

4

Bake

15 min

Bake in an oven preheated to 200°C / 390°F for 15 minutes, until the edges are golden.

5

Serve

2 min

Scatter with dill and serve hot.

Reminder

Turn the salmon frequently as it caramelizes. If the syrup burns, it will leave a bitter taste. Allergens: contains fish (salmon) and wheat (gluten).
