Marinated anchovies are a Greek-style appetizer made by leaving fresh anchovy fillets in a sauce of lemon juice, apple cider vinegar, and olive oil, without cooking them. Since no heat is used, it can be packed in a lunchbox and eaten as a snack.
Rinse the cleaned anchovy fillets with cold water and pat dry with paper towels.
Combine the lemon juice, apple cider vinegar, olive oil, thinly sliced garlic, salt, black pepper, and thyme.
Coat the anchovy fillets with the marinade and refrigerate for at least 90 minutes, until the flesh turns white.
Drain the marinated anchovies and serve cold.
Make sure the sauce fully covers the anchovies as they marinate; exposed areas will not cure evenly. If the marinating time is too short, the center may remain raw, so leave them for at least 90 minutes. Allergen: contains fish (anchovies).
