This palace dessert is made by shredding boiled chicken breast into fine strands and mixing them into a milk pudding. The chicken provides texture, not flavor: its fibers give the dessert a stretchy, elastic consistency. Mastic adds aroma and masks any lingering chicken smell.

Poach the chicken

Place the chicken breast in plenty of cold water, bring to a boil, then simmer for 20 minutes. It is cooked when a thermometer inserted into the thickest part reads 74°C / 165°F and no pink remains inside; this temperature is required for food safety and should not be judged by appearance alone. Remove the chicken from the poaching liquid and let it cool until just warm.

Shred and rinse the chicken

Break the warm chicken into large pieces, then use your fingertips to pull each piece into strands as fine as hair. Do not use a knife or food processor; both will cut the fibers. Rinse the strands under cold water in a colander three times, squeezing them by hand each time. Continue until the water runs clear; cloudy water carries the chicken smell.

Make the starch slurry and crush the mastic

Whisk the rice flour and starch into 300 ml of the milk, then strain the mixture. Grind the mastic resin with 1 tablespoon (15 ml) of the sugar in a mortar until powdered.

Bring the milk to a boil

Bring the remaining milk and sugar to a boil in a heavy-bottomed pot, stirring until the sugar has completely dissolved.

Add the chicken and cook the pudding

Pour the flour mixture into the boiling milk in a thin stream, stirring constantly. Add the rinsed chicken fibers a little at a time with your fingers, separating them so they do not clump. Lower the heat and cook for 10 minutes, scraping the bottom as you stir. Add the mastic sugar during the last 2 minutes. Remove from the heat when the mixture falls slowly from the spoon in one piece.

Pour into a tray

Pour the mixture into a wet tray and smooth the surface with a wet spatula. Let it cool uncovered. Once chilled, cut it into slices with a wet knife and sprinkle with cinnamon.

Reminder

Chill the pudding in the refrigerator for at least 4 hours after pouring it into the tray; this time is not included in the recipe time. If cut too soon, the slices will not hold their shape and the fibers will fall apart.

Lifleri yıkama adımını hafife almayın, üç kez suyunu değiştirdim ve hiç et kokusu kalmadı. Sütü kaynattıktan sonra lifleri katmak da gerekiyor, soğuk süte atınca lifler dibe çöküp topaklandı.

Lifler iğne gibi ince ayrılmalı. Elde didikledikten sonra bir de parmak arasında ovun, hissediliyorsa kalın kalmış demektir.
