Mastic rice pudding is made by cooking crushed mastic resin with rice in milk, then browning the tops of the bowls in the oven. Mastic does not overpower the milky flavor; it adds a resinous note behind it. The rice must first be boiled in water: added directly to the milk, it releases its starch and makes the pudding gluey instead of leaving distinct grains.

How to make it?

Boil the rice in water

Rinse the rice, add it to a pot with 250 ml of water and cook over low heat for 20 minutes, until all the water is absorbed. Press a grain between your fingers; the center should still be slightly firm, not completely broken down. This step releases the surface starch into the water so it does not mix into the milk.

Add the milk and bring to a boil

Add the milk and half the sugar to the parboiled rice and bring to a boil over medium heat. Lower the heat and cook for 15 minutes, stirring occasionally. The mixture should thicken slightly but remain pourable; it will thicken more in the oven and as it cools.

Add the mastic and starch

Pound the mastic with 1 tablespoon (15 ml) of the remaining sugar in a mortar until powdered; without sugar, it will stick to the mortar. Slurry the starch with 100 ml of cold milk and strain it. Slowly pour the starch mixture into the simmering pudding while stirring, and cook for 4 minutes. Add the mastic sugar and the remaining sugar, then stir for 2 more minutes.

Pour into bowls

Divide the mixture among oven-safe bowls, filling each to a finger’s width below the rim. Do not fill them to the top, as the pudding will rise in the oven. Smooth the surfaces with the back of a spoon.

Brown under the broiler

Arrange the bowls in a deep baking pan and pour a finger’s depth of hot water into the pan; it moderates the heat and keeps the edges from drying out. Preheat the oven to broil at 220°C / 430°F and cook for 15 minutes, until dark brown spots appear on the surface. Stay by the oven during the final 5 minutes.

Reminder

Let the bowls cool at room temperature for 1 hour, then chill them in the refrigerator for 3 hours. This resting time is not included in the recipe duration. The pudding is runny while hot and sets as it cools.

Pirinci suda haşlayıp sonra süt eklemek işe yarıyor. Doğrudan sütte pişirince taneler diri kaldı.

Sakızı sonda ekleme sırası doğru, başta atınca kokusu uçuyor ve acımsı bir iz bırakıyor. Pirinci suda haşlarken suyu tamamen çektirmek gerekiyor, sulu pirince süt ekleyince sütlaç hiç koyulaşmadı.
