A Peruvian street-food favorite, mazamorra morada is a dessert made by simmering purple corn with cinnamon, cloves, and dried fruit, then thickening it with cornstarch. Served chilled in small jars, it is easy to pack in a lunchbox.

Add the dried apricots, prunes, and apple, then simmer for 15 more minutes.
Strain the mixture and return the liquid to the stove. Stir the cornstarch dissolved in a little cold water, granulated sugar, and lemon juice into the liquid. Cook, stirring, for 10 minutes, until thickened.
Divide among small jars and chill in the refrigerator for at least 30 minutes before serving.
Do not discard the purple corn husks while simmering; most of the deep color comes from them. After straining, press the husks with a spoon to extract the remaining color.
