In Antakya cooking, cucumbers are not only eaten raw; large ones are hollowed out, filled with ground meat and rice, then cooked in tomato sauce. As they cook, the flesh turns translucent and slightly sweet, absorbing some of the meat’s fat. Peeling the skin in narrow lengthwise strips lets sauce penetrate while helping the stuffed cucumbers hold together.

Prepare the cucumbers

Wash the cucumbers and trim the ends. Use a peeler to remove alternating lengthwise strips of skin, leaving bands of skin between them; fully peeled cucumbers can fall apart while sauce will not penetrate unpeeled ones. Use a corer to hollow them out, leaving half a centimeter of flesh around the sides.

Mix the filling

Finely chop the onion and garlic. Combine the ground meat, rinsed and drained rice, onion, garlic, mint, Turkish red pepper flakes, black pepper, salt, and olive oil. Knead for 5 minutes; the filling is ready when it holds together without cracking.

Stuff the cucumbers

Fill the cucumbers, leaving a finger-width of space at the top because the rice expands as it cooks. Chop the hollowed-out cucumber flesh and spread it on the bottom of the pot. Arrange the stuffed cucumbers in a single layer on top.

Make and pour the sauce

Grate the tomatoes and whisk them with tomato paste, water, and pomegranate molasses. Pour the sauce over the stuffed cucumbers; it should cover them about two-thirds of the way because they release liquid as they cook. Scatter the butter over the top.

Cook

Place an upside-down plate over the cucumbers, cover the pot, and bring to a boil. Reduce the heat and cook for 30 minutes; they are ready when the flesh turns translucent and a fork easily pierces the side. Rest for 10 minutes, then serve hot with the sauce.

Reminder

Arrange the cucumbers in a single layer; stacked ones can crush those underneath and spill the filling into the pot.

Nar ekşisini sosa kattım, dolmanın tatlımsı salatalığını dengeledi. Antakya'da teyzem bir de üstüne nane serpiyor, kuru naneyi ocaktan indirdikten sonra. Sıcak yemeğe serpilince kokusu açılıyor ama pişerken koyulursa acılaşıyor.
