Meyane is a thick base made by toasting flour in fat, and it forms the foundation of this soup. The color of the toasted flour determines the color of the soup: lightly toasted flour makes a pale soup with a raw-flour taste, while darker toasted flour adds nutty depth. In Elazig, it is served with lemon on winter mornings.

Toast the flour

Melt the butter in a heavy-bottomed pot and add the flour. Toast over low heat, stirring constantly with a wooden spoon. The flour will clump at first, then loosen and become fluid. Around the fifteenth minute, it will turn a light hazelnut-brown color and smell slightly sweet; stop at that point.

Add the broth

Bring the broth to a boil in a separate pot. Lower the heat under the roux, then whisk in the hot broth one ladle at a time, making sure each addition is fully incorporated. The first three ladles are most important; if lumps form then, they will not smooth out later.

Simmer

Once all the broth has been added, add the salt and simmer over low heat for 10 minutes. The soup should coat the back of a spoon in a thin layer; if it is still runny, simmer for 3 more minutes.

Temper the egg yolk

Whisk the egg yolk with the lemon juice. Gradually whisk in two ladles of hot soup to warm the mixture. Turn off the heat, stir the tempered mixture into the pot, and sprinkle with mint.

Reminder

Do not pour all the broth into the roux at once. Add the hot liquid gradually while whisking; otherwise, the flour will clump and the soup will not become smooth again.
