Midye baklava is a Gaziantep baklava made by placing pistachios on a strip of phyllo dough and joining the ends in the center to form a mussel-shell shape. Unlike baklava cut in a pan, each piece is shaped individually, leaving the two ends of the pistachio filling visible. Keep the dough loose rather than taut when joining the ends; stretched phyllo will crack in the oven.

How to make it?

Make the syrup first

Bring the sugar and water to a boil and simmer over low heat for 12 minutes. Add the lemon juice before removing from the heat. The syrup is ready when the last drop falling from a spoon stretches into a thread and breaks. Pour the syrup into a wide container and let it cool in a cool spot on the counter.

Prepare the pistachios and butter

Coarsely chop the pistachios with a knife; processing them releases their oil and turns them into a paste inside the phyllo strip. Melt the butter over low heat, wait 3 minutes for the white solids to settle, then pour the clear butter into a separate container.

Cut, Butter, and Fill the Strips

Stack the phyllo sheets and cut them into strips 10 centimeters wide. Brush each strip with clarified butter. Arrange the pistachios in a line along the long edge, leaving one centimeter at each end. Fold the strip over the pistachios and close it loosely; the pistachios should be able to move inside the dough.

Shape into Mussels and Arrange

Gently curve the filled strip with both hands, overlap the two ends in the center, and press them together with your fingertips to seal. From the side, each piece should be rounded like a shell, with a plump center. Arrange the pieces seam-side down on a greased baking pan, leaving a half-finger-width gap between them, and drizzle the remaining butter over the top.

Bake

40 min

Bake in an oven preheated to 180°C / 355°F: 25 minutes on the lower rack, then 15 minutes on the middle rack. The pieces are done when their sides are evenly golden and they do not move when you shake the pan. If they are unevenly colored, rotate the pan during the last 10 minutes.

Add the Syrup

5 min

As soon as you remove the pan from the oven, ladle the cooled syrup between the pieces; do not pour it directly over the exposed pistachios, or their color will fade. Absorption is complete when the sizzling stops. Tilt the pan to check whether any syrup remains at the bottom.

Reminder

The syrup should be completely cool, and the baklava should be fresh from the oven. If both are hot when combined, the phyllo will not absorb the syrup; it will pool in the bottom of the pan and the pieces will fall apart.
