A favorite on breakfast and brunch tables in Argentina, milanesa a caballo is made by coating chicken schnitzel in breadcrumbs seasoned with red pepper flakes and grated Parmesan, then topping it with a fried egg. The name means “on horseback,” referring to the egg sitting on top of the schnitzel.

Pound and Season the Chicken

Pound the chicken breast to about the size of an egg and flatten it. Season with salt, black pepper, and red pepper flakes.

Coat and Fry

Dredge the chicken in flour, dip it in one beaten egg, then coat it in breadcrumbs mixed with grated Parmesan. Fry in hot oil for 4 minutes per side, 8 minutes total.

Fry the Eggs

Fry the remaining two eggs in a separate pan for 3 minutes, leaving the yolks runny.

Serve

Place the fried egg on top of the schnitzel and serve hot.

Reminder

Parmesan peyniri bulamadığım için galeta ununa rendelenmiş kaşar peyniri ekledim, tadı beklediğimden daha yumuşak oldu ama yine de güzel bir kabuk oluştu ve çocuklar bile şikayet etmedi.
