Mini khachapuri is a kid-friendly take on a Georgian dish, made by filling yeasted dough with farmer cheese, folding it into small pockets, and cooking them in an air fryer. These bites take less time to prepare than full-size khachapuri and are easy to hold.

How to make it?

Proof the dough

Dissolve the fresh yeast in warm milk and let it foam for 10 minutes. Add the salt to the flour and knead into a soft dough. Cover and let rise in a warm place for 60 minutes, until doubled in size.

Fill and seal

15 min

Roll the dough into small circles and place farmer cheese in the center. Fold into pockets and press the edges firmly to seal.

Air fry

15 min

Brush the pockets with melted butter and arrange them spaced apart in the air fryer basket. Cook at 190°C / 375°F for 15 minutes, until golden. If you do not have an air fryer, bake them in an oven preheated to 190°C / 375°F for the same amount of time.

Reminder

Press the edges firmly to seal; loose pockets may leak cheese as they cook. Do not crowd them in the air fryer basket; they will not cook evenly without space between them. Allergens: Contains wheat (gluten) and dairy (farmer cheese).
