A soup served in Korea on birthdays and after childbirth. Dried miyeok (wakame) is rehydrated, sautéed with beef in sesame oil, then simmered for a long time in water. Do not skip the sautéing step: cooking the seaweed in oil softens its sharp, ocean-like flavor and gives the soup a milky appearance. Seaweed added directly to the water can remain bitter.

Prepare the seaweed

Drain the rehydrated miyeok, rinse it two or three times with fresh water, and squeeze it in your hands. Cut the long strands into 4 cm pieces; uncut seaweed is difficult to pick up with a spoon and hangs over the plate.

Sauté the beef and seaweed

Heat the sesame oil in a pot. Add the beef and cook, stirring, for 3 minutes until its color changes. Add the drained seaweed and sauté over medium heat for 6 minutes, until glossy and beginning to stick slightly to the bottom of the pot. This step defines the character of the soup, so do not rush it.

Add the garlic and soy sauce

Add the grated garlic and soy sauce and cook, stirring, for 2 more minutes. The soy sauce caramelizes in the hot pot and adds depth to the soup; added to water, it would contribute only saltiness.

Simmer for a long time

35 min

Add the water and bring to a boil, skimming off any foam. Reduce the heat, leave the lid slightly ajar, and simmer for 30 minutes. The broth will change from clear to pale and milky, and the seaweed will become very tender. If the liquid reduces too much, add boiling water.

Season and serve

Add the salt and black pepper and taste. Miyeok guk is an unspiced soup and should stay that way; do not add chili pepper, tomato paste, or anything else. Ladle into bowls and serve hot with plain steamed rice and kimchi.

Reminder

Soak the dried miyeok in plenty of cold water for 30 minutes; it will expand to six or seven times its original volume, so use a large bowl. Discard the soaking water; it is salty and gritty.

Yosunu ıslattıktan sonra iyice yıkamak gerekiyor, tuzu ve kumu o sırada gidiyor. Yosunu ıslattıktan sonra kısa doğramak da gerekiyor, uzun bıraktığımda kaşıkta toplanıp çorbayı yemek zorlaştı.
