Native to Montreal, these sesame-coated bagels are made by briefly boiling shaped dough in honey water before coating it with sesame seeds. Cooking them in an air fryer gives the crust a crispness similar to that of traditional wood-fired ovens.

Divide the risen dough into equal pieces. Roll each piece into a thin rope and join the ends to form a ring.
Add the honey to boiling water and boil the rings one at a time. Drain them and immediately coat with sesame seeds.
Arrange the rings in the air fryer basket and cook at 200°C / 390°F for 12 minutes, until deep golden on top. If you do not have an air fryer, bake them in a preheated 220°C / 430°F oven for 15–18 minutes.
If you roll the rings too thin, they may tear during cooking; keep them moderately thick. Honey in the boiling water darkens the crust, so reducing it will produce a lighter color. Contains wheat (gluten) and sesame.
