Parboil the lentils in water over medium heat for 10 minutes.
Add the lentils, rice, water, cumin, salt, and remaining olive oil. Bring to a boil, cover, and cook over low heat for 18–20 minutes.
Remove from the heat and let rest, covered, for 10 minutes.
Top with the caramelized onions and serve warm or hot.
Store covered in the refrigerator for up to 4 days. Freeze for up to 2 months.
