Preheat the oven to 250°C / 480°F with the baking sheet inside, then bake the pides for 14 minutes. They are done when the kashar has melted, golden-brown spots appear on the surface, and the edges are dark. Lift one with a spatula and check underneath; the bottom should be dry and browned.
Let the dough rise for about 70 minutes, until doubled in size; this time is not included in the stated recipe times. Let the sautéed mushrooms cool before adding them to the dough; a hot filling can soften it.
