A popular breakfast bread in Iran, nan-e barbari is made by shaping yeasted dough into a long oval, brushing it with a chickpea flour wash called romal, and baking it quickly. Sesame seeds add flavor and crunch to the crust.

How to make it?

Knead the dough

Dissolve the yeast in warm water. Add the flour, salt, and cooking oil, knead, and let the dough rise for 30 minutes.

Prepare the romal wash

Mix the chickpea flour with a little water to make a thick, syrup-like wash.

Shape and top the bread

8 min

Shape the dough into a long oval and make grooves across the surface with your fingertips. Brush with the romal wash and sprinkle with sesame seeds.

Bake

12 min

Bake in an oven preheated to 220°C / 430°F for 12 minutes, until golden brown.

Reminder

Preheat the oven for at least 15 minutes before baking the flatbread; it may stay flat and fail to puff in a cold oven. Allergen information: Contains wheat (gluten).

Nohut unu bulamazsam romalı atlayıp direkt susam serpsem pidenin rengi ve dokusu çok mu farklı olur? 30 dakikalık mayalanma benim mutfağımda daha uzun sürdü, soğuk mutfağım yüzünden olabilir.

Romalı atlarsanız pide daha soluk ve düz bir yüzey alır, o altın rengi ve hafif çıtırlığı büyük ölçüde romal verir. Susamı doğrudan hamura hafif bastırarak yapıştırabilirsiniz ama sonuç aynı olmaz.

Fırını yeterince ısıtmadan pideyi verdim, 12 dakika sonra üstü hâlâ soluk ve hamur kaldı; alt kısmı ise yanmıştı. Fırını önceden ısıtma uyarısını atlamak büyük hataydı.
