A delicate dough made with chickpea flour, cooking oil, and powdered sugar is scented with rose water and cardamom, then shaped with small flower cutters. The raw dough can be stored in the freezer, and the bite-size cookies make a low-calorie snack.

How to make it?

Mix the dough

Rub the cooking oil into the chickpea flour, then add the powdered sugar, rose water, and cardamom. Mix briefly to form a soft dough.

Rest the dough

Wrap the dough and let it rest at room temperature for 30 minutes; this will make it less fragile.

Shape the cookies

15 min

Roll the dough out 1 centimeter thick and cut out small flowers. Sprinkle crushed pistachios on top.

Bake

Bake in an oven preheated to 150°C / 300°F for 15 minutes, until lightly golden. Let the cookies cool completely before touching them.

Reminder

The cookies are very fragile when they come out of the oven, so let them cool completely before removing them from the pan. Allergen: contains tree nuts (pistachios).
