This version of nankhatai, a classic Pakistani cookie, uses olive oil instead of traditional clarified butter. Semolina gives the cookies a sandy, crumbly texture, while cardamom preserves the characteristic aroma of Pakistani bakeries. The dough can be frozen in balls and baked when needed, making this a practical make-ahead recipe.

Make the Dough

Beat the olive oil with the powdered sugar until slightly fluffy. Add the flour, semolina, cardamom, baking powder, and salt, and knead into a smooth dough.

Shape and Chill

30 min

Roll the dough into balls about 3 cm in diameter and arrange them on a tray. Flatten them slightly, sprinkle chopped nuts in the center, and refrigerate for 30 minutes.

Bake

20 min

Bake in the preheated oven until the bottoms of the cookies are lightly browned; the tops should remain pale.

Cool

10 min

After removing the cookies from the oven, let them cool on the tray for 10 minutes. They are very fragile, so do not move them while hot.

Reminder

Be sure to chill the dough before baking; warm dough will spread in the oven and become thin, losing its sandy texture. Allergens: contains gluten (flour, semolina) and tree nuts (type unspecified).

Kakule yerine tarçın kullandım ve bir tatlı kaşık ekledim, ama koku beklediğimden çok daha baskın ve keskin çıktı, bir dahaki sefere yarım tatlı kaşığa düşüreceğim.

Tarçın kakuleden daha keskin bir baharattır, bir tatlı kaşık çoğu zaman fazla gelir. Yarım tatlı kaşıkla başlayıp tadına bakarak artırmanız daha güvenli olur.

Hamuru 30 dakika yerine yalnızca 10 dakika dinlendirdim, fırında tamamen yayılıp yassı bir disk hâline geldi, bir dahaki sefere tam süresini bekleyip aynı hatayı bir daha tekrarlamayacağım.

Haklısınız, soğuk yağ hamuru toplu tutan tek şey; 30 dakikanın altına inince kurabiye şekli koruyamıyor. Bir dahaki seferde tam süreyi beklemeniz sonucu tamamen düzeltir.
