Put the rinsed rice, coconut milk, water, lemongrass, bay leaves, crushed garlic, and salt in the pressure cooker and stir.
Close the lid and bring the cooker to pressure over high heat. Reduce the heat and cook for 12 minutes. Turn off the heat and let the pressure release naturally.
Once the pressure has fully released, open the lid and remove the lemongrass and bay leaves. Fluff the rice with a fork and let it rest with the lid ajar for 5 minutes.
Do not open the pressure cooker until the pressure has fully released, or the rice may fall apart. Keep stirring as you add the coconut milk to prevent the rice from sticking to the bottom of the pot. This recipe contains no major allergens.
