Boil the baby potatoes and green beans in separate pots, then drain and let them cool to room temperature.
Boil the eggs in boiling water for 9–10 minutes, then transfer them to cold water. Peel and quarter them.
Whisk the mustard, olive oil, and lemon juice until smooth.
Arrange the potatoes, green beans, tomatoes, olives, and onion on a large platter. Place the tuna and eggs on top.
Drizzle the dressing over the salad and serve immediately.
Important: Boil and cool the potatoes and green beans separately; pouring dressing over hot vegetables may make them mushy. Allergen: contains egg and fish (tuna and anchovies).
