This breakfast loaf, made in Turkish home kitchens with nigella seeds and cheese, is prepared by sprinkling nigella seeds over cheese-filled dough, scoring it in a crosshatch pattern, and baking it. It is a convenient option to keep in the refrigerator for a late-night snack.
Dissolve the yeast in warm water, then knead with the flour, olive oil, and salt.
Cover the dough with plastic wrap and let rise in a warm place for 40 minutes, until doubled in size.
Gently punch down the risen dough, fold in the diced cheese, and shape it into a loaf.
Brush the top with beaten egg and sprinkle with nigella seeds. Score it in a crosshatch pattern, then bake in an oven preheated to 200°C / 390°F for 25 minutes, until golden.
After removing the bread from the oven, cool it on a wire rack; leaving it on the counter will make the bottom damp. Contains wheat (gluten), dairy (cheese), and egg.
