Prepare the crust

Mix the finely crushed cookies with the melted butter. Press the mixture firmly into the bottom of a springform pan, then refrigerate to help it set.

Make the filling

Beat the room-temperature cream cheese with the powdered sugar and lemon juice until smooth. In a separate bowl, whip the cold cream until thick, then gently fold it into the cream cheese mixture with a spatula.

Add the filling to the pan

Pour the filling over the cookie crust and smooth the top with a spatula. Refrigerate for at least 3 hours to set.

Make the strawberry sauce

Cook the chopped strawberries and sugar over low heat. Once the berries soften, stir in the cornstarch mixed with a little water and cook until thickened. Let the sauce cool before adding it; hot sauce can soften the cheesecake.

Top with sauce and serve

Spread the cooled strawberry sauce over the cheesecake and chill for 1 more hour. Release the springform pan, slice, and serve cold.

Reminder

This no-bake cheesecake needs plenty of time to set in the refrigerator; chill for at least 4 hours, preferably overnight. Contains gluten (cookies) and dairy (cream cheese, cream, and butter). Make sure it is thoroughly chilled before removing it from the pan.
