Ice cream and chilled desserts
Made with oats in place of the thickener used in traditional milk pudding, this dessert is sweetened with a powdered sweetener and presented as a diabetes-friendly breakfast option. The whole-grain oats make it filling and rich in fiber.
Combine the milk and ground oats in a saucepan. Bring to a boil over medium heat, stirring continuously.
As soon as it starts to boil, reduce the heat and add the powdered sweetener and vanilla. Cook for another 15 minutes, stirring, until the mixture coats the back of a spoon.
Spoon the hot pudding into bowls and sprinkle cinnamon on top.
Chill the bowls in the refrigerator for at least 2 hours, then serve once the pudding has set.
Stir the pudding continuously as it boils; if it catches on the bottom of the pan, the oats will smell burnt. Allergen: contains milk and dairy products. Check the product label to see whether the oats contain gluten; this may vary by product.
