Add the rolled oats and optional currants and mix. Let the mixture rest for 10 minutes so the oats absorb moisture and the dough is easier to shape.
Scoop portions of the mixture onto a parchment-lined baking sheet and flatten them into mounds. Bake in an oven preheated to 180°C / 355°F for about 18 minutes, until the edges are browned.
Use ripe bananas; the riper they are, the sweeter the cookies will be, with no need for added sugar. Oats may contain gluten or be cross-contacted with gluten-containing products; if you have celiac disease or gluten sensitivity, choose certified gluten-free oats. Store the cookies in an airtight container for up to 2 days.
