A light, refreshing spring dish of fresh fava beans cooked in olive oil with tender green onions. Garnished with dill and served cold, it can also be enjoyed as a meze.
Heat the olive oil and sauté the finely chopped green onions until just softened.
Add the trimmed fresh fava beans to the pot and toss with the onions for a few minutes.
Add a little water, the sugar, and salt. Cover and cook over low heat until the fava beans are tender.
Stir in the finely chopped dill just before removing from the heat. Serve warm or cold.
Important: Fresh fava beans can be cooked without peeling, but their skins may toughen if the beans are not young. If so, boil and peel them before use. Contains no allergens.
