Unlike classic cookies, these are made with olive oil and oats and cooked over low heat in a pressure cooker for people without an oven. They contain no dairy, and olive oil’s heart-healthy fat profile makes them a light yet satisfying snack.

Wrap the dough in plastic wrap and refrigerate for 15 minutes; chilling helps keep the cookies from spreading as they cook.
Take small ball-sized pieces of dough, flatten them slightly, and arrange them with space between them on the parchment-lined bottom of the pressure cooker.
Close the pressure cooker lid with the gasket removed and cook over low heat for 40 minutes, until the bottoms are browned. Check once midway and rearrange the cookies.
The cookies may look soft when they come out of the pressure cooker, but they crisp as they cool, so do not overcook them. Allergen: contains wheat (gluten).
