Beat the eggs and sugar
6 minBeat the eggs and sugar with a mixer until foamy.
Made with olive oil and freshly squeezed orange juice instead of the solid and liquid fats used in classic cake recipes, this cake offers a heart-friendly, lactose-free alternative. Its soft texture and light citrus aroma make it suitable for breakfast or a lunchbox.
Beat the eggs and sugar with a mixer until foamy.
Add the olive oil, orange juice and orange zest, then mix.
Sift in the flour, baking powder, vanilla and salt, and mix to make a smooth, lump-free batter.
Pour the batter into a greased cake pan and bake in an oven preheated to 180°C / 355°F for 30 minutes, until a toothpick inserted in the center comes out clean.
Insert a toothpick into the center of the cake; if it does not come out clean, bake for 5 more minutes. Allergens: contains wheat (gluten) and egg.
