A simple vegetable dish of çarliston peppers (mild long green peppers) lightly sautéed with garlic in olive oil. It can be served hot or cold and comes together quickly with just a few ingredients.
Wash and dry the peppers, then pierce the stems a few times with a fork.
Cook the garlic gently in olive oil over low heat until fragrant.
Add the peppers and sauté over medium-high heat, turning occasionally, until their skins are lightly blistered.
Add the grated tomato and salt, and cook for a few more minutes. Important: Do not overcook the peppers, or they will lose their firmness.
Important: Sauté the peppers briefly over high heat; prolonged cooking softens their texture and dulls their flavor. Olive oil dishes have a more pronounced flavor when served after cooling.
