Orange revani is a semolina cake flavored with orange zest and syrup made with orange juice in place of some of the water. The orange adds acidity as well as aroma: it makes the syrup slightly thinner, and the semolina absorbs it more quickly. Avoid grating the white pith, which is bitter and becomes more noticeable after baking.

Make and cool the syrup

Bring the sugar, water, and orange juice to a boil and simmer over low heat for 12 minutes. Skim off any foam that gathers on the surface; if left in, it can cloud the syrup and leave marks on the revani. Add the lemon juice before removing the syrup from the heat. Let it cool completely.

Whisk the batter

Wash and dry the orange, then use the top surface of a fine grater to remove only the orange zest. When the white pith appears, stop and move to another spot. Beat the eggs and sugar for 4 minutes, until pale and doubled in volume. Add the yogurt, vegetable oil, and zest. Fold in the semolina, flour, and baking powder with a spatula, lifting from the bottom.

Pour into the tray; do not cut yet

Pour the batter into a greased tray and tap the tray lightly on the counter twice to level the surface. Do not cut it before baking; the revani rises in the oven, and pre-cut pieces will stick together and become misshapen.

Bake and add the syrup

35 min

Bake in an oven preheated to 180°C / 355°F for 35 minutes. The cake is done when a toothpick inserted in the center comes out clean and the top is evenly golden. As soon as the tray comes out of the oven, cut the cake into slices with a sharp knife. Ladle the cooled syrup over it, directing it along the cut lines. It has been absorbed when the sizzling stops.

Reminder

The syrup should be cold, and the revani should be fresh from the oven. If both are hot when combined, the semolina will draw the syrup to the bottom and the top will stay dry.
