Osmaliyeh is an elegant Lebanese dessert made by sautéing kataifi pastry strands in butter until golden and layering them with kaymak (Turkish clotted cream). It takes skill to keep the pastry crisp while it holds the cream filling.
Boil the granulated sugar with a little water, then add the lemon juice. Boil for 5 minutes and let it cool.
Toss the kataifi pastry strands with the melted butter in a wide pan and toast, stirring constantly, until golden.
Press half of the toasted kataifi into a tray and spread the kaymak over it. Cover with the remaining kataifi and press lightly.
Drizzle the cold syrup over the layers, sprinkle with pistachios, slice, and serve immediately.
Stir the kataifi constantly as it toasts in the pan; it can burn on the bottom quickly if left unattended. Allergens: contains wheat (gluten), dairy, and tree nuts (pistachios).
