Bloom the gelatin

Panna cotta is an elegant Italian chilled dessert set with gelatin and made with cream, milk, and vanilla. With its velvety texture and delicate sweetness, it is often served with fruit sauce.
Mix the powdered gelatin with a few tablespoons (15 ml each) of cold water and let it bloom for about ten minutes.
Heat the cream, milk, sugar, and vanilla in a saucepan over medium heat without bringing it to a boil, until the sugar dissolves.
Add the bloomed gelatin to the hot cream mixture and stir until completely dissolved.
Divide the mixture among bowls or molds. Once it reaches room temperature, refrigerate for at least four hours, preferably overnight.
Important: Soak the gelatin in cold water until softened before using it; otherwise, it may form lumps in the mixture. Allergen note: contains milk and dairy products, as well as gelatin (from an animal source). Store covered in the refrigerator for up to four days.
