These iconic Portuguese tarts are made by lining small molds with puff pastry, filling them with an egg yolk custard and baking at a very high temperature until the tops are mottled. Cooking the custard without curdling it while keeping the pastry layers intact requires care. Their small size makes them easy to pack into a lunchbox.

How to make it?

Line the molds

Roll the puff pastry thinly and press it into small tart molds.

Make the custard

Mix the cornstarch with the milk and heat in a saucepan. Add the egg yolks and granulated sugar and cook, stirring constantly, until thickened. Add the butter and stir to combine.

Fill

Divide the custard between the lined molds, filling them two-thirds full.

Bake

15 min

Bake the tarts in a preheated oven set to a very high temperature for 15 minutes, until the tops are dark and mottled.

Reminder

Keep stirring the custard after taking it off the heat. If left undisturbed, it will form a skin and lose its smoothness. Allergens: contains gluten (puff pastry), dairy (milk and butter) and eggs.

Fırını 250 dereceye ayarladım ama ısınması 20 dakikadan çok daha uzun bir süre sürdü, tartları erken koyduğum için benekler hiç oluşmadı ve üstleri soluk kaldı.
