Mix the apple puree with the granulated sugar and add the egg white. Beat with a mixer for 15 minutes, until pale and tripled in volume.
Spread the foam in a thin, even layer on a large baking sheet lined with parchment paper.
Place the baking sheet in an oven preheated to 100°C / 210°F, leaving the oven door slightly ajar. Dry for 4 hours, until the foam is completely dry and has an elastic texture.
Make sure the bowl and beaters are completely dry before whipping the apple puree with the egg white; even a little moisture can keep the foam from expanding. Allergen: contains eggs.
