Its name means “poor man’s potatoes,” but this is one of Spain’s most popular side dishes: potatoes, onion and peppers are softened slowly in plenty of olive oil rather than fried. The technique falls between frying and poaching—the oil should not boil, only gently sizzle, so the potato slices steam in the oil and turn creamy. Raise the heat for the last two minutes to brown the edges. Crack an egg over the top and it becomes huevos rotos.

Cut the potatoes and vegetables

Peel the potatoes and cut them into 4 mm rounds. Do not rinse them in cold water—the starch helps give the dish its consistency. Cut the onion and both peppers into 1 cm-wide strips. Crush the garlic cloves with the flat side of a knife, leaving the skins on.

Warm the oil with the garlic

Add the olive oil and crushed garlic to a wide, shallow skillet and warm over medium heat. When the garlic turns golden, remove it and set it aside; if left in the oil, it will darken and make the whole dish bitter. Add the bay leaf to the oil.

Steam the potatoes in the oil

Arrange the potato slices in the oil, sprinkle with half the salt, cover, and lower the heat. The right sound is a steady, gentle sizzle; if you hear bubbling, the heat is too high. Every 5 minutes, use a spatula to turn the slices from the bottom to the top. Do not stir, or the slices will break.

Add the onion and peppers

Add the onion and pepper strips to the skillet, sprinkle with the remaining salt, cover, and continue cooking over the same low heat. Cook until the onion is completely translucent and the peppers feel tender when bitten. The mixture will look watery at this stage; that is normal.

Uncover and brown the edges

Remove the lid and raise the heat to medium-high. Leave the slices undisturbed for 5 minutes, until their edges develop golden spots. Turn them once and repeat. This final step adds a browned layer to the tender vegetables.

Finish with vinegar and garlic

Remove the skillet from the heat and drizzle in the apple cider vinegar. Peel and crush the reserved garlic, then stir it in. Add freshly ground black pepper and sprinkle with chopped parsley. Serve hot on its own, with grilled fish, or with an egg cracked over the top.

Reminder

The oil should never bubble vigorously; you should hear only a steady, gentle sizzle. Boiling oil will fry the potatoes and give them a crisp crust instead of a creamy texture, changing the character of the dish.

Yağda buğulama kızartma değil, yağ kaynamamalı. Kısık ateşte yirmi dakika tuttum, patatesler yumuşadı ama dağılmadı. Sarımsağı baştan yağda açıp çıkardım, sonuna kadar yağda bırakınca kararıp acılaşıyor ve bütün tabağa o tat siniyor.

Süzülen yağ atılmaz. Kavanoza alın, aynı yağla ikinci kez yapabilirsiniz.
