Toast the bread rolls in a pan with the remaining butter over medium heat for about 2 minutes, until lightly browned on both sides.
Drizzle the vegetable mixture with butter, garnish with finely chopped red onion, and serve hot with the toasted bread rolls.
The vegetable mixture can be refrigerated for 3 days or frozen for 2 months. Reheat over low heat.
