Add the onion and sauté until softened. Stir in the tomato paste and cook for a few more minutes.
Add the peas and rinsed rice, then stir for a few minutes.
Add the hot water, salt and black pepper. Cook over low heat until the water is absorbed.
Remove from the heat and let the pilaf rest for 5 minutes. Stir and serve.
Important: If using frozen peas, add them without thawing. Adjust the cooking water to account for any extra moisture they release.
