This summer cake is made by arranging fresh peach slices on top of the batter and baking them until they sink partway into it. The slices are not mixed into the batter: peaches are juicy and would break down and make the batter wet. Arranged on top, they sink partway under their own weight and hold their shape. Leave the skin on because it keeps each slice together and adds color as it bakes.

Step by Step
How to make it?
1
Slice the peaches
8 min
Wash and dry the peaches, remove the pits, and slice them with the skin on to ½ cm thick. Do not peel them; the skin holds each slice together and develops a reddish edge in the oven. Let the slices rest on paper towels for 5 minutes to remove surface moisture.
2
Beat the butter and sugar
6 min
Beat the room-temperature butter and sugar for 5 minutes, until pale and fluffy.
3
Add the eggs
3 min
Add the eggs one at a time, beating after each addition until incorporated. Adding them all at once may cause the mixture to separate.
4
Add the flour and milk
4 min
Sift in the flour, baking powder, and cinnamon. Add the milk and mix with a spatula just until no flour is visible. The batter will be thick and fall slowly from the spoon.
5
Pour into the pan and arrange the peaches
5 min
Pour the batter into a greased and floured pan and smooth the surface. Arrange the peach slices in an overlapping ring on top. Do not press them down; they will sink into the batter under their own weight as they bake.
6
Bake
45 min
Bake in an oven preheated to 175°C / 345°F for 45 minutes. It is done when the edges of the peaches are browned, the batter has risen between them, and a toothpick inserted between two slices comes out clean. Do not insert the toothpick into the fruit, which will always be wet.
Reminder
Let the cake cool in the pan for at least 30 minutes, then on a wire rack for 1 hour; these times are not included in the recipe duration. While the cake is hot, the peach juices have not set yet, and the slices will be wet.
