Made with South Africa’s national tea, rooibos, this dessert features peeled pears gently poached in tea steeped with cinnamon and cloves. Naturally fat-free and simple, it is an elegant dessert for afternoon tea and a heart-healthy option.

How to make it?

Steep the tea

Bring the water to a boil, add the rooibos tea, cinnamon stick, and cloves, and let steep for 5 minutes.

Poach the pears

30 min

Remove the tea bags and stir in the honey. Place the peeled pears upright in the tea and simmer, covered, over low heat for 30 minutes.

Cool and serve

5 min

Remove the pears from the tea and let them cool to room temperature. Serve with a little of the tea drizzled over them.

Reminder

Choose pears with their stems intact and position them upright; this improves presentation and makes them easier to handle while poaching.
