Sauté the onion
5 minMelt the butter and sauté the finely chopped onion until soft.
Rooted in the Indian influence on British cooking, this pilau rice takes minutes to make by frying leftover boiled rice in butter with turmeric, cumin and cinnamon. Low in calories and full of spice, it is a staple side dish in British curry houses.
Melt the butter and sauté the finely chopped onion until soft.
Add the turmeric, cumin and cinnamon stick and cook for 1 minute. The aroma filling the kitchen is a sign that the spices are releasing their flavor.
Add the leftover cooked rice and currants, season with salt and heat for 8 minutes, stirring occasionally.
Remove the cinnamon stick and serve hot.
Check the rice frequently as you stir to make sure it does not stick to the bottom of the pan. Allergens: contains milk and dairy products.
