This Filipino vegetable stew combines pumpkin, eggplant, okra and green beans with shrimp paste, cooked quickly in a pressure cooker. Simple and satisfying, it also makes a filling snack between meals.

How to make it?

Prepare the vegetables

Wash and chop the pumpkin, eggplant, okra and green beans.

Sauté

Sauté the onion and crushed garlic in olive oil, add the tomato and cook for 3 minutes.

Pressure-cook

8 min

Add the vegetables and shrimp paste and close the pressure-cooker lid. Once it whistles, cook over low heat for 8 minutes.

Release the steam

5 min

Remove the cooker from the heat and wait 5 minutes for the steam to release naturally. Stir and serve.

Reminder

Arrange the vegetables in a single layer in the pressure cooker rather than piling them up, so they cook evenly. Allergens: contains crustaceans (shrimp paste).

Bamya bulamadığım için yerine biraz daha fazla taze fasulye kullandım, doku biraz daha değişti ama tat dengesi hiç bozulmadı, tekrar aynı şekilde yapacağım bu tarifi.
