This well-known Izmit confection is made by combining toasted flour with a caramelized sugar mixture, then repeatedly pulling it by hand into fine strands. Patience and skill give it its distinctive thread-like texture that melts in the mouth.
Cook the flour with the butter in a wide pan over low heat, stirring constantly, until light brown and fragrant. Caution: Watch it closely because the flour can toast quickly and burn.
Boil the sugar, water and lemon juice until a drop forms a flexible consistency that does not break when tested in cold water.
While the sugar mixture is still warm, gradually add the toasted flour and knead it in.
With floured hands, repeatedly fold and pull the mixture until it separates into fine strands. Caution: This step takes practice; the strands may not form right away on the first try.
Gather the strands into loose coils and serve.
Allergens: contains wheat (gluten) and butter (milk). Important: Keep your hands and the toasted flour completely dry while pulling the sugar mixture. In a humid environment, the mixture will not separate into strands and may remain clumped.
