Dolama is a Gaziantep baklava made by placing kaymak (Turkish clotted cream) and pistachios inside thin yufka sheets, rolling them into a thick log, and cutting it into finger-length pieces. Unlike pistachio sarma, it has a kaymak filling and a thicker roll; the cut pieces reveal white kaymak and green pistachios in a spiral. The kaymak is added cold and in strips so it does not melt and leak out in the oven.

How to make it?

Make and cool the syrup

Bring the sugar and water to a boil and simmer over low heat for 12 minutes. Add the lemon juice just before removing it from the heat. Pour the syrup into a wide bowl and let it cool completely. Cold syrup is especially important for desserts with kaymak: hot syrup will melt it immediately.

Prepare the pistachios and butter

Coarsely chop the pistachios with a knife. Melt the butter, let it stand for 3 minutes, and spoon off the clear fat.

Cut the kaymak into strips

Cut the refrigerator-cold kaymak into strips 1 centimeter thick and as long as the yufka sheets. Keep the strips refrigerated until ready to use. If the kaymak starts to soften in your hands, put it back in the refrigerator for 10 minutes.

Roll and coil

Stack two yufka sheets and brush them with butter. About two finger-widths in from a long edge, arrange a line of pistachios and place a strip of kaymak right beside it. Fold the yufka over the filling, then roll it toward the opposite edge without squeezing it or leaving gaps. Press the roll gently to flatten it; this is what makes the spiral visible when sliced.

Cut and arrange on the tray

Cut the roll into 5-centimeter pieces with a sharp knife and arrange them, cut sides up, with space between each, on a greased baking pan. Drizzle the remaining clarified butter over the tops.

Bake and add the syrup

35 min

Bake in an oven preheated to 180°C / 355°F for 35 minutes, until the tops are golden. Pour the cooled syrup between the pieces as soon as they come out of the oven. When the sizzling stops, tilt the tray to check that no syrup remains at the bottom.

Reminder

The kaymak should be cold from the refrigerator and added in strips. Soft kaymak spread with a spoon will melt in the oven and run to the bottom of the yufka, leaving that piece doughy.
