Bring the sugar and water to a boil and simmer for 10 minutes, until thickened. Add the lemon juice and let cool.
Loosen the shredded kadayif pastry and toss it with the melted butter.
Take small tufts of kadayif pastry, place some pistachios in the center, and roll tightly. Arrange on a greased baking sheet.
Bake in an oven preheated to 180°C / 355°F for 30–35 minutes, until the top is golden and crisp.
Pour the cold syrup over the hot dessert as soon as it comes out of the oven, then let it rest for 20 minutes.
Keeps fresh for 3 days at room temperature in a covered container. Can be stored in the freezer for 1 month.
