These no-bake energy bites are made by blending softened dates with walnut kernels, rolled oats and pomegranate molasses, then shaping the mixture into balls. The tartness of the pomegranate molasses balances the dates’ deep sweetness.

How to make it?

Soften the dates

10 min

Soak the pitted dates in hot water for 10 minutes to soften them, then drain. If the dates remain dry, they will not break down in the food processor or bind the mixture.

Blend

5 min

Blend the softened dates, walnut kernels, rolled oats, pomegranate molasses, cinnamon and salt in a food processor until the mixture forms a sticky dough. Do not over-process, or the oil may separate and the mixture may warm up.

Shape

10 min

Take walnut-sized pieces of the mixture and roll them between your palms into balls.

Reminder

Pause the food processor at short intervals to check the mixture; processing it for too long can warm it and release the oil. Allergen: contains tree nuts (walnuts). Also check the product label for a gluten statement on the oats, as contents vary by product.
