These meatballs are made by kneading ground beef and lamb with pomegranate molasses and spices, letting the mixture rest, and then grilling it. The sweet-tart balance of the pomegranate molasses offsets the richness of the meat and gives the dish a flavor associated with Gaziantep cuisine.

How to make it?

Knead the mixture

Knead the ground meat with the grated onion, garlic, pomegranate molasses, Turkish red pepper flakes, cumin, black pepper, salt, and parsley until the mixture no longer sticks to your hands.

Let it rest

40 min

Cover and refrigerate for at least 40 minutes; this gives the spices time to flavor the meat.

Shape the meatballs

20 min

Pinch off portions about 3 cm in diameter and shape them into elongated meatballs.

Grill

20 min

Grill over high heat, turning the meatballs so each side cooks for 5 minutes. The pomegranate molasses should caramelize lightly on the surface.

Reminder

Refrigerate the meatball mixture for at least 40 minutes before shaping; mixture that has not rested may fall apart on the grill. After shaping the raw meatballs, you can freeze them on a tray, transfer them to a bag, and grill them directly from frozen when needed.

Nar ekşisi bulamadığım için yerine limon suyu ve bir tutam pekmez karışımı kullandım, tat yakınlaştı ama gerçek nar ekşisinin o derin ekşiliğini tam yakalayamadım. Yine de aile beğendi.

Izgaramın altı iyi almadığı için köfteler 20 dakikada değil neredeyse 30 dakikada piştikleri, bu sırada bazı köftelerin dış yüzeyi fazla karardı. Ateşi biraz daha aralıklı tutmak daha iyi olurdu benim mangalımda.

Harcı 40 dakika yerine tam 2 saat dinlendirdim, köfteler ızgarada çok daha az dağıldı ve şekli iyi korudu. Nar ekşisi biraz fazla geldi bana, bir dahaki sefere bir kaşık azaltacağım.
